Keto One Year Later

This way of eating has been a journey.  The keto we do now looks a lot different than the one we started with and my version is a lot different than my partner's version.  I will let him tell his own side but for me, here is a rough outline of the adjustments I made:

1. Plant paradox phase 1 cleanse diet (3 days)
2. Plant paradox phase 2.
3. What the hell, keto diet with counting macros
4. Keto with intermittent fasting, testing with strips periodically
5. Keto with twice weekly 24 hour fasts, still testing
6. Low carb lifestyle without dairy, eggs, grains, walnuts, coconut...  and not fasting at all.
**I am not entirely sure I can call what I do keto since I try to work in some healthy carbs now and then.

Altogether I have lost just shy of twenty pounds which puts me back to my college weight.  My skin has cleared up considerably and I can't remember the last time I had knee pain.

People say keto is not a sustainable diet.  I think keto works for people who have the will power to not eat certain foods but don't do well with just plain eating less.  I tried lower calorie diets for years and I found myself failing within several weeks.  I haven't ever felt the need to cheat so strong that I gave in and ate a cheat food.  But I couldn't count the number of times I stuffed myself on approved foods.

Final thoughts, I really miss dairy and coconut.  I hope to someday be able to work them back in my diet.
