Kentucky Butter Cake with Bourbon

I found a recipe for a Kentucky Butter Cake but wanted to add bourbon and change up the butter syrup.  This is the end result of my experiment.

Keto Kentucky Butter Cake with Bourbon Glaze

Cake Ingredients
  • 2 cups (230g) almond flour – packed
  • 1/2 cup (115g) sour cream – levelled
  • 1/2 cup (100g) butter
  • 3 eggs
  • 2/3 cup (120g) sugar substitute
  • 1 tsp baking powder
  • 1 tsp vanilla
  • ¼ cup bourbon
  • 1 tsp coconut flour
Syrup Ingredients
  • 1/4 cup (50g) butter
  • 1/3 cup (60g) sugar substitute
  • 2 tbsp Bourbon
Instructions
  1. In a mixing bowl, whisk together the cake ingredients.
  2. Pour into a greased and coconut floured bundt cake pan.  
  3. Bake at 350°F / 175°C for 35-45 minutes.
  4. Once the cake is done, use a skewer or end of a utensil to poke several small holes into the top of the bundt cake. 
  5. Combine the butter, sweetener, and a splash of water in a small sauce pan.   Heat over medium heat, continually whisking.  Off heat, add bourbon.
  6. Pour the butter mixture around the cake, making sure the holes are filled with the butter. Keep swirling the pan around until your mixture has dissolved into the cake.
  7. Set aside and let it cool for 1 hour.
  8. Invert onto serving plate and serve.

  1. Yes- 2/3 cup of a 1:1 sugar replacement. The cake does not come out super sweet.

    I personally do not know how to adjust between almond flour recipes and straight coconut flour. The latter can absorb a lot more liquid and has a more chewy texture. I have coconut sensitivity so its not something I have explored.
