My first attempt at fat bombs was...
Gingerbreadish Keto Bombs
I used a cup of almond flour. 1/3 cup 1:1 sugar replacement, 100 grams Ghee, 1/2 tsp ginger, 1/2 tsp cinnamon, 1/4 tsp all spice. Mix, roll into balls, and chill.
Taste test: This reminded me of eating cookie dough. A little sweet but with a nice flavor profile. I used salted Ghee and I really like the mix of sweet with a touch of salt.
Next up: Chocolate Keto bombs, because who doesn't love chocolate (except Nick).
Lemon Keto Bombs
I tried this Lemon Fat Bomb recipe, but it did not work for me. It tasted fine, but the idea that you can blend this amount of cocoa butter and other ingredients into a smooth paste is not something I found to be true. I tried the following preparations:
1. Blending all ingredients in my food processor. The result was tasty but all the liquid separated from the tiny pieces of oil clumps.
2. Blending in my Vitamix. After about 3 seconds, it pushed all the ingredients up the side and was just spinning. The end result was the same as try 1 but with much increased frustration.
3. Throwing the ingredients in a pan, heating them over low heat, and whisking until mixed up. Next I poured them into a parchment paper lined rectangular glass leftovers container. I was super lazy and non-exact about the parchment paper so that may cause issues. Currently the mix is sitting on my back porch since its below freezing. Curious to see what happens.
I did sample the non-mix. It's a refreshing tart taste. I think if you ever smelled lemon soap and thought, this smells so good I wish I could eat it, this may be your thing. Since probably all normal people have never thought that, if you are looking for a not overly sweet way to consume fat that's got a tart zip, go for it. But really, have you ever smelled the Healer soap from Posh and just kind of wondered...
Lesson learned, melt don't blend large chunks of solid fats.
So, those of us that have actually *read* the manual for the Vitamix know that the club-shaped implement included with it is a "tamper" and is not used for beating people. This nifty magical device is inserted through the access hole in the lid while the unit is blending and is used to push anything crawling up the side back down into the blades. Method 2 may have worked out much better had you known this. The tamper included with every model of Vitamix is sized appropriately so it cannot slip past the access hole and cannot touch the blade at any time.
ReplyDeleteOK two thoughts on this:
ReplyDelete1. You know me well enough to know that you should have demoed this because you KNOW I never read manuals. I actually feel a little disappointed. I probably am so disappointed I made three typos in this section alone.
2. Melting it worked way better and you loved the end result.
They were lemony good. I'd like to try a key lime variant.
