Quick Sausage and Broccoli Stir Fry

Bear with me; I made this up on the fly tonight,  but it turned out to be really delicious!  Done in the Plant Paradox style for two servings.  All ingredients are approximate :)
Takes about 15 minutes or less.

Ingredients:
  • 1/2 pound of hot Italian sausages (I bought Ayersville sausage at MOM's Organic Market,  since it meets the diet), cut into 1/2 inch pieces
  • 2 cups broccoli florets
  • 1/2 onion chopped into strips
  • 1/2 roasted red pepper, cuts into bite size pieces
  • 2-4 garlic cloves chopped
  • Olive Oil
  • Fresh herbs and Parmesan cheese to top
Instructions
To get this done at the same time and in about ten minutes I used two pans simultaneously.

In Pan 1:
Saute sausage in regular olive oil over medium-high heat.  When its about done (~130F at this point)  push it to one side of the pan and fry the onion in the other half.  Cook both until onions are soft and sausage is approaching the 160F target.  Add garlic and saute until fragrant.

In Pan 2:
Steam broccoli until it reaches the tenderness you like.  When its done, drain, return to pan, and leave it on low without a cover to let it dry a little.

Once Pan 1 and Pan 2 are ready, move the broccoli to Pan 1.  Add in roasted red pepper.  Salt to taste.  Add extra olive oil and toppings as desired.

I added fresh basil and Parmesan cheese.  The sausage I used really made the dish.
