Greek Themed Chicken
Ingredients
- 1 -1.5 lb boneless chicken (breast or thigh depending on your preference)
- 1 cup feta
- 1 small onion. sliced
- 1 yellow squash, cut into half moons
- 1 zucchini, cut into half moons
- Garlic
- 1 Lemon
Instructions
- Preheat oven to 350.
- Pat chicken dry then salt and pepper.
- In an oven proof skillet, brown chicken on both sides. I like to brown chicken in Ghee but olive oil will work. Place the skillet in oven and cook chicken until it reaches 160. This should take about ten minutes if your chicken isn't super thick and you browned it well. If the chicken was thin, it may take less. The timing for starting the next step depends on how crisp you like your vegetables and how thick the chicken is.
- While the chicken is in the oven, saute vegetables and garlic in a second saute pan with a generous splash of olive oil. Add salt, oregano, and red pepper flakes to taste.
- Add the vegetables to the pan in the oven, sprinkle feta over top and allow the cheese to soften.
- Squeeze lemon over mixture and serve.
