"Korean" style lettuce wraps

I converted one of my favorite week night meals into a Keto-friendly version.  Here goes nothing:

Ingredients:
  • English Cucumber
  • Rice Vinegar
  • 1-1.5 lbs ground beef
  • Coconut Aminos
  • Toasted Sesame oil
  • Garlic
  • Sukrin Gold
  • Butter (Boston) lettuce
  • Mayo
  • Siracha
Four parts:

Part 1: Pickled Cucumbers
Slice and English cucumber into thin half moons.  Place in a non-reactive bowl and vinegar.  You want enough so it touches most of the cucumbers.

Part 2: Sauce
Mix 4 cloves minced garlic, 3 T. Coconut aminos, 2 teaspoons Sukrin Gold, and 1 Tablespoon of Toasted sesame oil in a bowl.  (You can use soy sauce for coconut aminos)

Part 3: Meat
Brown the ground beef until cooked through in a skillet over medium to medium high heat.  Add Part 2 Sauce, reduce heat, and simmer for a couple minutes.

Part 4.  Topping
Mix mayo and sriracha to taste.  I like 1/4 cup mayo to about a teaspoon of sriracha.

Assemble on your plate and enjoy.  Lettuce, meat, cucumber, and sriracha mayo.
