Green Smoothies

Our version of the plant paradox morning shake.   Serves 2.

Ingredients:
  • 2 cups romaine lettuce
  • 1 cup spinach
  • 1 avocado
  • 1 lemon, juiced
  • 1 tablespoon ginger, or a 1-inch peeled chunk
  • 1 green banana
  • 1 scoop collagen (I use the Dr. Axe multi kind)
  • 2 T MCT oil
  • fresh mint leaves
  • 6-8 drops peppermint stevia
  • At least 2 cups of cold water
Blend everything in a high power blender (love-love-love our Vitamix) until smooth. Experiment with water -- we tend to use a little bit more than 2 cups to avoid making it too much like green pudding.

Clearly I really like mint.  Our first shake had two juiced lemons in it and we both thought it was a bit much. I also experimented with replacing lemon juice with apple cider vinegar.  That was not a great idea.

Ways to customize this shake:
  • replace green banana with a few slices of green mango
  • not make it a mint explosion (leave the mint out)
  • add more lemon
  • add more or less stevia

  1. After researching killer kale, I am taking a calcium and magnesium supplement along with this smoothie.
